Graeme's Shiraz Cabernet

Passing Clouds Graeme's Shiraz Cabernet, first made in 1980, is Passing Clouds' foundational wine. It blends fruit from the Axedale and Serpentine Vineyards in Bendigo.
The fruit is destemmed and hand sorted before vinification in open stainless steel fermenters. The batches are hand plunged twice a day. Some see some post-ferment maceration.
The wine matures in French oak for around 12 months. Each parcel is then assessed and the optimum blend is identified. The wine is coarse filtered prior to bottling.
Bright purple, Passing Clouds Graeme's Shiraz Cabernet is flush with juicy red fruit flavours and persistent tannins. Cellaring potential is 10 years.
